Hello February

It is February already, and I had every intention to write a post sooner, but everything has been so consumed with this trip - exactly one week from today, the kids and I will be on a plane, headed to Georgia to visit a friend for a few days, and then hop on another plane, headed to South Africa.

We are all super excited, but like usual it takes a ton of planning and prepping - packing up life for nearly three months can be overwhelming without a plan.  So that is what has been keeping me busy, aside from school with the kids, cleaning, laundry, groceries, and cooking.

I can't believe that it is almost time - I am more then ready to see my family, and spend time with them.

It has been a crazy couple of weeks - paperwork, passports, plane tickets - you name it.  But I am so happy that the only thing I have left to do it pack - #winning!

So back to life lately....

Here is my sad attempt at the super super blue, blood.... etc moon.  We couldn't really see much from our location.... but the moon was shining extra bright when we got up in the morning.

  We went on a little last minute family dinner date the other night.  We have to get all those in before we leave (luckily Nate will meet us there at the beginning of April) so that is way exciting.  The kids ages are starting to get more fun (yet challenging) and meal times tend to be so much fun.  I love hearing everything that is going on their little minds.


  The most old fashioned little "diner" looking restaurant with the best steak-fingers ever.



  Morning tea time is still one of my favorite times of the day - especially when Nate is able to join me.  My newest obsession - adding some collagen peptides to it (it makes it nice and foaming, and the health benefits - score.)

  So I made these little spinach muffins the other day (I know, I know) well to my surprise the kids devoured the whole batch - #momwin

  I went to my first ever Superbowl party last weekend.  The funny part is no-one there really cared all that much about football, but it was a good excuse to just get together and hang out.  We had fun, good food, good company, and my favorite chocolate cake.


  Also these berries makes me long for summer something crazy.

  Another new obsessions - gut shots.  Well yes I am that freak that will pretty much try anything all in the name of thyroid + liver health ;) - and then choose what works for me.  This is pretty potent, and called a shot for a reason... surprisingly it doesn't taste that bad.

  It is Valentine's Month - and well we will be packing and heading out around that day, but it didn't stop us from enjoying some heart love.



  I am super late on the whole chia pudding thing - and I can seriously kick myself.  I generally just use them in my smoothies and granola, but now my world has been changed.  My new favorite breakfast, lunch, snack, dinner, and dessert.  It is suitable for any of those events.


  Now I am just rambling.

My cat is starting to pick up that something is about to change, and she seems pretty sad.  I seriously wish I could just bring her with me, she is seriously the most amazing pet ever.

The kids and I finished up school yesterday, and will be taking one of our school breaks for a the next couple of weeks, and they couldn't be more excited.

I can't believe that it is almost time to leave - it is exhilarating and frightening all at once.
